Ultimate Cheese Plate With Roasted Grapes

½ pound purple grapes
½ pound green grapes
2 tablespoons extra-virgin olive oil
Kosher salt and freshly ground black pepper
4 sprigs fresh thyme
4 sprigs fresh rosemary
6 ounces ricotta cheese (or another cheese)
6 ounces Brie cheese (or another creamy cheese)
6 ounces sharp white cheddar cheese (or another firm cheese)
1 cup smoked almonds
8 fresh figs, quartered
Crackers and sliced baguette, for serving
1. Preheat the oven to 450°F and line a baking sheet with parchment paper.
2. Arrange the grapes in clusters on the baking sheet. Toss the grapes with the olive oil, salt and pepper. Nestle the thyme and rosemary among the grapes.
3. Roast until the grape skins are blistered and wrinkled, 12 to 15 minutes.
4. Transfer the grapes to the center of a large board. Arrange the ricotta, Brie, cheddar, almonds and figs around the grapes. Serve with crackers and baguette.
